  • Terrine of wild boar with roasted almonds and choice of mixed fruit compote
  • Filet of duck breast cooked in its fat, Jonagold apple compote with sweet spices and Arabica sauce

  • Lamb shank slowly baked in the oven with sweet herbs, prunes and candied lemons

  • Sashimi of salmon marinated gravelax style, “kunzumiyuzu ” and poppy seeds vinaigrette
  • Portion of cod with leaf spinach, Tarbes beans and chorizo stew
